Batch freezers
Batch freezers make ice cream in batches that can vary in size, with the operators controlling the size of each batch. Small ice cream stores and gourmet shops purchase these types of freezers, and their capacity ranges from six quarts to 44 quarts. Other than size, batch freezers can be segmented into air-cooled and water-cooled freezers. The condensing unit, which is the engine of the freezer, can be cooled by either air or water. In the five years to 2011, batch freezer sales are expected to decrease.
